Slow Cooker Mexican Meatball Soup

Have you heard of book bub yet?  I apologize if I have already told you about it, I am prone to repeating myself lately because of severe mommy brain (and by lately, I mean the last year and a half or so).

You can customize your book bub selections based on which e-reader you have, but basically it just sends you a daily email with sale-priced and free books in the categories you choose.  I think it’s pretty awesome and have downloaded many books for free from it.  (Although honestly, I don’t think I’ve read more than 2 of them yet!)  Don’t forget to check out the Amazon reviews on the books though, it has saved me from downloading some bad ones.

I downloaded a free book this week and, for some reason, actually decided to read it.  Crazy, I know.

It reminded me why I don’t usually read books (unless they’re under the cooking or how-to/self-help categories).  It was good, fairly short, but sad.  However, I was hooked, almost finished the entire book during baby girl’s nap, and proceeded to immediately buy the sequel.

I think I was in a depressed mood the rest of the day.  I really don’t know why I do this to myself.  It’s especially worse if it’s {mostly} a true story.  Then I wallow in what I think the characters most certainly felt way back when (even though they are past those feelings by now and sometimes are no longer living).  I am way too empathetic.

And that is why I don’t read novels or biographies.  The same thing happened last time I read a free ebook. Crying, tears, general emotional-ness. I end up downloading all the heart-wrenching personal tragedy books.  I think they need to make that a category.  It should come with a warning – avoid at all costs.

Um, so this soup, it’s good.  And I’m not just saying that.  Plus it’s sooo easy.  Tasty + easy = amazing meal.  (It might even make you forget about the depressing biography you just read.)

You know that I’m not kidding about this soup being good because I’ve made it twice in the past week and a half already. You’re probably not falling off your chair yet, but this comes from the girl who does not make repeat meals.  Like pretty much ever.  Except for pizza, as I just mentioned recently.  We have pizza over and over and over and over.  You get the picture.  Meatball soup and pizza, that’s it for repeats.

The proof is in the pudding.  Or the soup.  Whatever.

{Slow Cooker} Mexican Meatball Soup

Serves: 10-12 servings
  • 40-45 frozen Italian meatballs
  • 3 cups low-sodium chicken broth
  • 2 (15 ounce) cans black beans
  • 2 (14.5 ounce) cans diced tomatoes
  • 4 cups frozen corn
  • 2 (8 ounce) cans tomato sauce
  • 2 teaspoons garlic powder
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • pepper to taste
  1. Add all ingredients to crockpot and cook on High for 2-3 hours. (Or you can also cook on low for 4-6 hours).
