I’m giving you a little break from all things apple.  I thought that you should see that we have occasionally eaten things without apples in them this fall.  I kid.  Maybe.

I don’t know what it is, but I just haven’t felt like cooking lately.  Mostly, I’ve felt like eating…oh and baking, and then eating. But I have made more than just apple bread, and apple salad, and apple scones (oh wait, I haven’t shared those with you yet.  I promise they’re coming!).

Actually, I do know why I haven’t felt like cooking.  Partly because I haven’t done much meal planning/grocery shopping lately.  When I don’t meal plan, I never feel like making dinner. Meal planning is an essential step for me.  The other reason I haven’t felt like cooking is because baby girl has been so needy lately and doesn’t like to play by herself much.  I pretty much have to be sitting with her most of the time.

Not that I’m complaining.  I realize that this stage doesn’t last long, and I looove playing with her.  She’s started giving hugs to the hubby and I recently, and it is so sweet and melts my heart every time.  Those are definitely the best parts of my day.  I am also so thankful for my hubby working hard so I can stay home with my little girl.  God has blessed me way to much for me to be whining.  Plus, then I just sound like my baby!

Anyway, in all my non-meal planning and last minute meal crunch-time, I remembered this tilapia recipe.

 Parmesan Pesto Tilapia

The thing I love about fish is that you can throw together a meal with fish super fast.  I usually end up thawing my fish in a bowl of warm water because I forget to take it out of the freezer in time to thaw it in the refrigerator.  It thaws pretty quickly that way.  Then I top it or bread it and toss in the oven for a quick bake.

Fish is the way to go when you want a quick dinner, when it’s 5 o’clock and you haven’t a clue what to make, when your original dinner plans have fallen through, or when you live way to far out in the country to stop by a restaurant and grab a quick bite to eat.

That’s what I’m talking about.  Fast, delicious, and easy.  Make this tonight!  (Oh, and don’t forget to use garden fresh tomatoes.  If you don’t have any, ask your neighbor for some or stop by your local farmer’s market.)

Easy Parmesan Pesto Tilapia

Serves: 2 servings
Parmesan Pesto Tilapia Adapted from: Pinch of Yum Servings: 2 2 tilapia filets salt and pepper to taste 1/2 cup Parmesan cheese, finely grated 2 Tablespoons prepared pesto (store-bought or homemade) 1 medium tomato, diced lemon wedges, if desired
  • 2 tilapia filets
  • salt and pepper to taste
  • 1/2 cup Parmesan cheese, finely grated
  • 2 Tablespoons prepared pesto (store-bought or homemade)
  • 1 medium tomato, diced
  • lemon wedges, if desired
  1. Place tilapia filets on a greased baking sheet.  Sprinkle filets with salt and pepper to taste.  Top each with half of the Parmesan cheese.  Broil for 8-10 minutes, or until the fish is cooked through and flakes easily when touched with a fork.
  2. Top each filet with half of the pesto and diced tomato.  Serve with lemon wedges for juicing over filets, if desired.
