Peanut Butter Glazed Brownie Donuts

If you’re like me, you “pin” stuff (to Pinterest) all the time and never get around to making most of the things you pin.

I see so many things that I say to myself “I’m going to make ____ right away!”  Usually I don’t have all the ingredients on hand, it’s not season-appropriate, I was already planning something else for dinner, or I’m just too lazy.

These donuts fell somewhere between too lazy and “hubby keeps asking me to stop making desserts.”  Of course, once I made them and realized how simple they are, my “too lazy” excuse falls horribly short.

So yea, I originally saw these donuts on Simply Scratch (love this blog) a year ago – oh my gosh I can’t believe it’s been that long!  Anyway, I pinned them and promptly forgot about them.  Every time I’d see them on my board I felt guilty about making them for breakfast, so I just didn’t make them at all.

That is, till my sister came to visit.  She never minds desserts. (Although I think even she got overloaded by all the sweets we made and ate!)

These donuts are absolutely dee-licious.  And while I wouldn’t eat them for breakfast, (let’s face it, they do have brownie in the name) there’s absolutely nothing wrong with being a little indulgent for dessert one day.

They taste just like brownies and have a delicious peanut butter glaze that takes them over the top.

I sized the recipe down to make only 6 – just enough to fit in my donut pan!

Peanut Butter Glazed Brownie Donuts

Adapted from: Simply Scratch
Yield: 6 donuts

4 ounces dark chocolate, chopped
4 Tablespoons butter, at room temperature
1/2 cup sugar
1/4 cup + 2 Tablespoons brown sugar
2 eggs, at room temperature
1/2 cup + 2 Tablespoons all-purpose flour
2 1/2 Tablespoons dutch-process cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon kosher salt (use about 1/2 the salt if using regular table salt)
For the glaze:
3/4 cup powdered sugar
2 Tablespoons creamy peanut butter
2 Tablespoons milk
1/2 teaspoon vanilla extract
Sprinkles or chopped peanuts for topping

1. In a saucepan, melt chocolate and butter over low heat.  Remove from heat and stir in sugars til dissolved.  Set aside.
2. In a bowl, sift together flour, cocoa powder, baking powder and salt. Set aside.
3. Add eggs, one at a time, to the warm chocolate mixture, stirring well after each addition.  Slowly add the dry mixture to the wet and stir just until incorporated.
4. Pour batter into greased donut pan, dividing batter between 6 donuts.  Bake in a preheated 325° oven for 12-14 minutes, or until toothpick inserted in donut comes out mostly clean.  Cool for 10 minutes in pan before removing to wire cooling rack.
5. For the glaze: Combine powdered sugar, peanut butter and vanilla extract.  Add milk until glaze is a pouring consistency.  Once cool, dip the donuts in the glaze, then top with sprinkles or chopped peanuts.

    1. Thanks! I know, I bought a donut pan last year after seeing some strawberry donuts I wanted to make 🙂

  1. OH my gosh, I seriously was planning to make chocolate donuts with a peanut butter glaze this weekend. It’s a different recipe, but I’ll have to compare it to yours. I just bought a donut pan yesterday! That is funny . . . great minds think alike 🙂

    1. Haha! I’ll have to check yours out when you post them :)I’m sure they will be different then, because these are less like chocolate donuts and more like brownies. I think I’m going to have to try fried donuts soon…
