Granola Bars (No-Bake)


These granola bars are absolutely delicious!  And the best thing about them is they’re quick and effortless.  You can make these bars faster than you can go to the store and buy a box of granola bars. (Even if you don’t live out in the country!)

I made these tasty bars over the summer sometime for the first time.  I kept meaning to make them again, but never had, so I bought some granola bars from the grocery store just the other day.   And what a disappointment they were.  As I ate my store-bought granola bar, I realized that I was going to have to make these granola bars this week.  The store-bought bars were falling quite short of my expectations.

These are a great on-the-go snack.  They hold up very well and it’s easy to individually wrap them for a snack on-the-run.  The rule about packing/pressing the granola bars is the harder you press them into the pan, the firmer they will be, meaning the better they will hold up on-the-go.  However, this also means that the harder you press them into the pan, the harder/crunchier they are to eat.  I like to find an in-between stage; I like my granola bars a little soft, but obviously still want them to hold up well.

Granola Bars (No-Bake)
Yield: 12 bars
2 cups rolled oats
1/2 cup nuts, chopped (I used pecans)
1/2 cup dried fruit (I used raisins)
1/4 cup butter
1/4 cup honey
1/3 cup packed brown sugar
pinch salt
1/2 teaspoon vanilla extract

  1. In a skillet over medium heat, toast oats and nuts until fragrant.  Pour into a heat-safe bowl and combine with dried fruit.  Set aside.
  2. In the same skillet, melt butter, honey, brown sugar and salt.  Cook, stirring frequently, until mixture boils/bubbles.  Continue cooking and stirring for an additional 2 minutes.  Remove from heat and stir in vanilla extract. Pour over oat mixture and stir to combine well.  Make sure all of the dry mixture gets lightly coated.  This make take a couple of minutes.
  3. Pour granola mixture into a 8×8 parchment-lined pan.  Firmly press (depending on how hard you want the bars) granola into pan.  Refrigerate for 30min-1 hour or until set and firm.  Remove from refrigerator.  Cut into 12 bars and store at room temperature in an airtight container.
