Pear Granola Breakfast Crisp

A kind member of our church gave the hubby and some fresh pears from their tree.  I like pears but the hubby doesn’t and since we had quite a few, I went in search of pear recipes.  I actually found it pretty hard to find very many recipes with pears, but when I came across this pear breakfast, I knew that I had found a winner. (and ps. even though he doesn’t like pears, the hubby actually liked this dish.)

If you happen to have granola made up already, this will be a super fast dish.  It takes a little longer if you have to make the granola (like I did, since I was out) but it’s worth the wait.  I liked the granola recipe and may have to add flax seed to my usual recipe from now on as well. (Flax seed and I have become buddies since being pregnant because of the extra protein and fiber it provides.)

The original recipe called for an extra 2 Tablespoons of honey in the granola, so if you like your granola sweet, you may want to add that back in.  I like to cut out some of the sugar if I’m having it for breakfast and not dessert.  My take on the granola was that it was good and with the pears it was extra delicious and plenty sweet. (I did burn my granola a little bit, so yours should taste even better if you don’t burn it!!)

I actually made a double batch of granola but didn’t double the pears, because I wanted leftover granola (to eat like cereal, or with yogurt, etc).  However, for the recipe I wrote up below, I have the doubled batch of granola and the doubled batch of pears in case you want enough pears for all your granola.

Pear Granola Breakfast Crisp

For the granola:
4 cups old fashioned oats
1 cup pecans, chopped
1 cup ground flax seed
1/2 cup unsweetened shredded coconut
1/4 cup olive oil
1/4 cup honey
1/4 cup packed brown sugar
4 Tablespoons unsalted butter
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
For the pears:
2 Tablespoons butter
8 medium pears, peeled, cored and thinly sliced
4 Tablespoons honey
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
pinch salt

  1. In a large bowl, combine oats, pecans, flax seed, and coconut.  Set aside
  2. In a small saucepan, combine oil, honey, brown sugar, and butter over med-low heat.  Heat and stir until butter is melted and sugar is dissolved.  Remove from heat.  Stir in vanilla extract, cinnamon, and salt.  Pour over oat mixture.  Stir until all of oat mixture is lightly coated.  (This may take a couple of minutes and the oats should look slightly sticky/clumpy.)
  3. Pour granola onto a large parchment (or silpat) lined baking sheet.  Bake in a preheated oven at 300° for 15 minutes.  Stir and bake for another 15-20 minutes or until golden, being careful not to burn the granola.  Cool.
  1. For the pears: Melt butter in a skillet over medium-high heat.  Add sliced pears and cook, stirring occasionally.  Cook until the pear juices have released and pears are soft and slightly transparent around the edges.  Stir in honey, vanilla extract, cinnamon, and salt.  Serve on top of the granola.
