Black Bean Burgers

I’ve been dying to post a soup recipe.  I know it’s not really soup season/weather anymore…at all.  It’s been in the 80°s and 90°s here lately, after all.  But the way I figure it, you can always turn the air conditioning on if you get overheated while eating your soup!  However, I have decided to spare you for another week (I’ve got plenty of soup recipes coming through the summer though) and give you a recipe with a little more summer flair.

I’m talking about these delicious vegetarian black bean burgers.  The good news about these burgers is that they are super cheap and fast to put together.  The other good news is that they stay together pretty well for bean burgers.  I enjoyed mine with all the usual burger fixings, (minus the cheese) and it was absolutely wonderful and packed with flavor.

Black Bean Burgers

Yield: 6 burgers 

3/4 cup panko bread crumbs
3 Tablespoons + 2 teaspoons oil
2 cans black beans, drained and rinsed (or use homemade black beans)
2 eggs
1 teaspoon cumin
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2 cloves garlic, minced
1 red pepper, finely diced
1/4 cup cilantro, minced
1/2 cup onion, minced

1. Combine panko and 2 teaspoons oil.  Heat skillet to med-high and add panko.  Stir constantly until toasted.  Be careful not to burn the panko – it toasts very quickly.  Remove from skillet and cool.
2. Set aside 1/2 cup of the beans and mash the rest in a small bowl.  In a seperate bowl, whisk together eggs, 1 Tablespoon of oil, cumin, salt, and cayenne pepper.  Add mashed and unmashed beans, garlic, red pepper, cilantro and onion.  Stir until well combined.
3. Divide mixture evenly into 6 portions and shape into burgers.  Be sure to make them thick – about 1 inch.  If you make them too thin, they will crumble while cooking.
4. Heat 1 Tablespoon oil over medium.  Place 3 patties in hot skillet and cook until well browned on both sides for a total of about 7-9 minutes (turning once).  Repeat step with 3 remaining burgers.  Top with hamburger bun, lettuce, tomato, etc. and serve!

*Note: These burgers stayed together very well while cooking and serving.  However, once you eat them, they do crumble quite a bit.  Yet, I think they are still tasty enough to eat; I probably just wouldn’t serve them when I had company over.
