Grilled Pimento Cheese Sandwiches

My parents lived most of their lives in Minnesota, and I lived there until I was 7 years old.  Pimento cheese isn’t a big deal up there, and I don’t recall ever eating it while I was growing up.  I’m not sure if my parents didn’t like it, or if my mom just never had a recipe for pimento cheese.

Either way, I haven’t had much for pimento cheese until lately.  I had always assumed that I didn’t like pimento cheese, but I don’t know if I had ever tried it.

A wonderful couple from our church had us over for lunch one day for pimento cheese sandwiches and homemade vegetable soup.  It was terrific, and I thoroughly enjoyed the pimento cheese sandwiches.  Since that time, I’ve started eating pimento cheese when I see it at potlucks.  I ran across this recipe on Eat Cake for Dinner blog and knew I had to try it.  As far as pimento cheese goes, it’s healthy than most recipes and it actually doesn’t have any pimentos in it at all.  And besides being healthier than most pimento cheese recipes, it is so delicious!  The hubby, who was born and bred on pimento cheese, even enjoyed it.

Grilled Pimento Cheese Sandwiches

Yield: 4 sandwiches
1 cup sharp cheddar cheese, grated
1/2 cup mozzarella cheese, grated
2/3 cup plain yogurt (drained)
2 green onions, diced (white part)
1/8 teaspoon salt
1/2 teaspoon pepper
1/2-3/4 red pepper, diced
1/2 jalapeno pepper, diced (seeds and ribs removed)
8 slices whole wheat bread

1. Combine all ingredients, except bread, in a bowl.  Butter outsides of bread and spread cheese mixture on the inside.  Cook over medium heat on a flat griddle on the stove – or a saute pan would also work – for several minutes on each side.  Serve immediately.
