This chicken sandwich is very easy to make and much healthier than a fast food chicken sandwich. It’s also quite tasty and makes for a no-fuss dinner. I served it with some Baked Potato Chips and an apple.
My only modification to the recipe was to take out the oregano. As it frequently happens in my kitchen, I was in the middle of dinner and found out I was missing an ingredient – oregano. I was fresh out from using it for the potato chips. So instead of 1 teaspoon of oregano, I used 1/2 teaspoon each of basil and marjoram and it worked just fine! (This recipe came from my Taste of Home Healthy Cooking magazine. I love getting my magazine every month because I get so many meals from it!)
Honey-Mustard Chicken Sandwiches
(slightly adapted from Taste of Home)
1/4 cup Dijon mustard
2 Tablespoons honey
1/2 teaspoon marjoram
1/2 teaspoon basil
1 teaspoon water
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
4 chicken breast halves, sliced thin
4 sandwich buns
lettuce & sliced tomato
1. Mix together first 7 ingredients in a bowl. Brush chicken with mustard mixture and place in baking dish or tray. Broil for 15-20 minutes, turning once and occasionally basting with mustard mixture.
2. Remove and serve chicken on sandwiches buns, topped with lettuce and tomato slices.

No, remember, I got that stray issue before the subscription started.Haha, yes the apple is for good measure – we needed some fruit with our meal.I didn’t realize I was out of oregano. I also had to get more basil. And did we ever get the bay leaves, because I don’t remember getting them.
