Friday’s Chili


I had to whip this up Thursday night and stick it in the crockpot so David could turn it on Friday.  We’re having a Chili Supper and Men’s Bake Off (more to come on that later) at our church tonight, and I signed up to bring chili.
The recipe is from a family friend and is my go-to chili recipe now.  I’ve modified it slightly because I don’t like as much meat in as she does!

Mary’s Chili
1 lb hamburger or sausage (I like the mild kind)
1 whole onion, chopped or 2 teaspoons dried onion flakes
1 teaspoon minced garlic
1 1/2 cups frozen cooked corn, or 1 can corn, drained
1 can kidney beans (do not drain!)
1 can diced tomatoes
2 cans of salsa (I use one mild and one medium to give just a little bit of spice.)
1/2 tsp cumin
cheddar cheese, for topping

In large pot, fry hamburger or sausage with onion and garlic.   Add corn, kidney beans, diced tomatoes, salsa and cumin.  Heat through and simmer for 20-30 minutes.  Top with cheddar cheese and enjoy!
(If you want to put it in the crockpot, just brown your hamburger and then add your other ingredients and set on low.)

P.S. You could definitely add spicier sausage and salsa to give this chili a little zing if you wanted, or ad 1/2 tsp cayenne pepper.
