Bran Muffins

Wheat Bran Muffins

I made a bran muffin recipe I found off of

I wanted a healthier version with wheat bran, so I substituted applesauce instead of oil (apparently you can substitute pumpkin as well – yum!) and some honey instead of all brown sugar.  They tasted great (minus the raisins, I don’t like the raisins in here!)

Whole Wheat Bran Muffins

Adapted from: All Recipes
Yield: 12 muffins

1 1/2 cups wheat bran
1 cup buttermilk (or use about 1 cup milk + 1 Tablespoon vinegar or lemon juice, let stand 10 minutes)
1/3 cup applesauce or oil
1 egg
1/3 cup brown sugar
1/3 cup honey
1/2 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

1. Combine wheat bran and buttermilk.  Let sit for 10 minutes.
2. While wheat bran and buttermilk is resting, combine applesauce, egg, brown sugar, honey, and vanilla extract.  Add to the wheat bran mixture.
3. Combine flour, baking soda, baking powder, and salt.  Fold into wet ingredients just until blended.
4. Grease muffin cups and fill about 2/3 full of batter.  Bake in a 375° preheated oven for 15-20 minutes or until toothpick inserted in muffin comes out clean.
